Chocolate Plum Cake

Chocolate, here we go again! Another amazing cake for chocoholics, very simple, delicious and beautiful to look at. This was one of my first recipes that I have tried and completely fallen in love with. When finished I usually sprinkle the top of this cake with a bit of powder sugar and serve the cake warm or cold with small portion of sour cream. Enjoy!


250g tinned plums

100g dark chocolate

50g unsalted butter

170g caster sugar

4 egg whites

80g flour

1 TS ground cinnamon

30g cocoa

2 TS rum  

Preheat the oven to 170°C. Use butter to spread it around the prepared 24cm round tin and spill the flour onto the butter layer (the dough will not be sticky in the tin after baking).  Chocolate, butter, cocoa and 100ml of warm water put together in a heatproof bowl over a saucepan of simmering water and let it melt. Meanwhile put the flour, cinnamon and sugar in freestanding electric mixer and add melted chocolate mixture and mix well. In another bowl whisk the egg whites with a pinch of salt into firm egg white snow and using spatula add softly into the cooled dough. Move the dough into the prepared cake tin and flatten the surface. Cut the plums into smaller pieces; add them into the mixture and spill with rum. Bake for 30 minutes.
