Pretty Avocado Nests

Summer is around the corner, it’s time to make pretty looking & fresh recipes for the sunny days. This recipe is easy to make and will impress your guests. You can serve it as an appetizer or as a quick lunch with a side of veggies or just a salad. For the info a regular egg would be too big in the avocado nest, however quail egg is just perfect ;)

Ingredients for 4 servings

  • 2 ripped avocado

  • 1 tomato

  • 4 quail eggs

  • parsley

  • chives

  • cayenne pepper

  • salt & pepper

Start by pre-heating the oven to 220°C. Cut the avocados in halves, remove the core. Add some salt, pepper and cayenne pepper then put it in a baking dish. Break the quail eggs and put each egg in the core location. Bake for about 15 minutes until the quail egg is softly cooked.
Meanwhile dice the tomato, and mince the chive and parsley.

  

Remove the avocados from the oven, sprinkle with the tomato, chives, parsley, salt and pepper! Your dish is ready to be served. You can add some drops of Tobasco to make it a little more spicy. Enjoy!
