Have you ever heard of Chia seeds? These small seeds from South America, rich in Omega 3, antioxidants, fiber and minerals. One tablespoon per day for a healthy dose of vitamins! Here's a quick recipe, gluten free and delicious. I used Chia seeds to make a healthy & vegan pudding with coconut milk, and I added lychee (but you can add your favorite fruit, mango is also a good mix;)
Ingredients for 5 puddings:
- 500 ml of coconut milk
- 120g Chia seeds
- 2 tablespoons honey
- Lychees, about 20 (or other fruit of your choice)
Mix the coconut milk with honey and add the Chia seeds. Place in 5 small glasses the mixture and let sit in fridge for one hour. Cut the lychees into small pieces and add to the pudding. Your puddings are ready to be served.
